This site has a very nice selection of free, downloadable folding instructions for paper airplanes. They are divided into beginner, intermediate, and advanced. The instructions are very well written.

The Ultimate Origami Airplane
This Japanese and English site has not been updated in a while but it has some good information on paper airplanes and some interesting designs (there are eleven different models).
